Looking for a simple side dish??
Forget the boring mashed potoes and try this!!!
■1 medium cauliflower head, chopped (makes 3-4 servings, may want to double)
■2-3 roasted garlic cloves
■1 Tbsp coconut oil
■fresh herbs of choice (chives & thyme are great)
■sea salt & pepper to taste----------------------------------
■Steam cauliflower, until it's very tender. Mine took about 15 minutes on the stovetop.
■Drain very well. Place all ingredients in blender, blend until mashed potato consistency.
